Carrots. I have always liked these orange vegetables, and I count myself lucky for that fact because now they are one of the only things I can eat until I advance on the SCD diet.
To begin with, Eliane Gottschall (the author of Breaking The Vicious Cycle) recommends cooking the carrots for four hours.
Four hours! I don’t have the patience to sit there and babysit a pot of boiling carrots for that long! Thank heaven for crockpots. 🙂
I load up my crockpot with baby carrots (bought in bulk at costco so I don’t have to peel them) and fill with water until they are all submerged. Then I let it sit on low all day!
